This breakfast has a little bit of Spanish in it!
Recipe for two:
2 mild sausages, casings removed and broken into pieces
1/2 yellow onion, chopped
1/2 red bell pepper, sliced
2 handfuls baby spinach
1 t fresh rosemary, finely chopped
1 t smoked paprika
pinch chili flakes
salt and pepper
olive oil
butter
Put some olive oil and butter into a heavy saute pan over medium heat. When the oil and butter are good and hot, add the sausage and brown.
When done add the onion and pepper, cook until soft, then add the rosemary, chili flakes, paprika and season with salt and pepper. Stir to toast the spice. Turn the heat down to low and add the spinach and wilt.
Serve on warm plates with an egg on top.

Breakfast!
Easy and a healthy breakfast!
Recipe for two:
1/2 red onion, chopped
1/2 c sweet peppers, chopped
1/2 c cherry tomatoes, quarted
1/2 c parsnip, chopped small
1/2 c sausage or ?
1/2 avocado, sliced
Coconut oil
Salt and pepper
Put the coconut oil in a saute pan and heat over medium high heat, when it's good and hot add the sausage or whatever kind of meat you want, if any! Brown the meat and then add the onion, peppers, parsnip and season with some salt and pepper. Cook until soft, then add the tomatoes, and cook until just warmed through.
Serve on a warm plate with sliced avocado. If you didn't use any meat, then saute an egg and place on top, this will give you the perfect nutritious and balanced meal of fiber, protein and fats...

Breakfast Pasta Pillow
Making good use of leftover food is really important to me. So I came up with this simple breakfast dish that makes good use of leftover pasta. It may sound weird and boring, but take it from me it's great!
In a pan over low heat, add a little olive oil, when the oil is hot add a handful of cooked pasta. Press the pasta down and out to the sides with the back of a wooden spoon, so it's laying flat in the pan. The idea here is to cook it slow to make sure the pasta is warm but also has a little color and is slightly crunchy.
Add a pinch each of salt and pepper and a pinch of chili flakes. When it's looking like that side is done flip it over and do the same thing. This only takes a few minutes to cook. Now cook an over easy egg. Plate up the pasta and serve the egg on top of the pasta. Now add a few drops of your favorite hot sauce...
Warning: Bacteria grows really fast on cooked pasta, so make sure to cover it and keep it cold. Don't keep it for more than a day or two!
