Just a little twist to traditional English breakfast!
You gotta try this, it's quick, cheap and really satisfying. . .
Recipe for one:
1 slice of bakery san Juan sourdough bread, middle removed
1 egg
pinch sea salt
pinch cayenne pepper
olive oil
butter
maple syrup
Add a little bit of olive oil and butter to a heavy skillet. Place over medium heat, when the butter is foaming, shake the pan to combine with the oil.
Take the bread and tear out the middle bit, about the size of an egg. Place the bread in the pan and cook for a couple of minutes. Now crack an egg right into the middle. Season well with sea salt and cayenne pepper. Cook until the egg looks like it's half way cooked, then turn the whole thing using a large steel spatula. Cook for about 2 more minutes, or until the egg is cooked the way you like it.
Plate onto a warm plate, and add a little more salt and a splash of maple syrup.

Breakfast Hole In The Wall... To celebrate my 101st post today!
I posted this way back when I first started this blog, but I thought I would do it again! You parents, this meal is good, and good for you, and it only takes 5 minutes to make, and the kids will love it!
First get a pan nice and hot (no non-stick pans please), apply some olive oil and a tablespoon of butter.
Make a hole in a piece of bread using your fingers or scissors, (I really like Bakery San Juan's sour dough for this). When the butter has melted add the bread, and then crack an egg in the hole. Season with salt, pepper and cayenne (a bit of cayenne makes this dish so don't skip it). After cooking it for 2 minutes over medium high heat, flip it and cook another two minutes or less if you want the egg runny!
It's as easy as that! Out the door in 5 minutes with a good nutritious meal...

A Word On Bread...
We all love a nice, fresh, crusty loaf or baguette, but be aware who you're buying it from, and what's in it!
Most commercial breads, hotdog and hamburger buns, doughnuts and pastries contain a conditioning agent called bromine, yep, the same stuff that's in hot tubs and swimming pools, basically it's non-chlorine bleach. Large scale bakers use it so they get the perfect product every time. Be careful, it's a killer!
You have to remember, bread is made from flour, water, yeast, salt and sometimes sugar or honey. If you look at what's in a loaf of packaged bread or a hamburger bun, you'll see a list of about 30-50 ingredients, some of which is not food!
Also, because of our advanced technology, we're now able to grind our flour super fine. The problem with this is, the pancreas turns it into sugar, not good!
A while ago I went to talk with Mark Shepard at Bakery San Juan and he showed me some of his bags of flour, which are bromine free. He also told me that he proofs his dough anywhere from 8-16 hours. That means that the bread is in a fermented state, which the body can digest easier...
Sprouted grain bread is not bad for you at all, because the grains have been sprouted and were in a fermented state!
Beware, bread, flour, sugar and bad fats are primary causes of cancer, diabetes and heart disease!

Oven Roasted Tomatoes and Cambazola Cheese Crostini
Easy, comfort food for adults, kids and boaters!
Recipe:
Sliced sourdough bread
Tomatoes
Cambazola cheese, Brie, Stilton or ??
Fresh basil leaves
Salt and pepper
Olive oil
Balsamic reduction drizzle
Set your oven at 300*. In a roasting pan, place sliced tomatoes as thick as you want them, a little less than a 1/2", cover them with a sprinkle of olive oil, then add a pinch of salt and pepper, and place them in the oven for about 1 1/2 hours. Meanwhile, take your cheese out of the fridge and get it to room temperature until tomatoes are done. When tomatoes are done, lay sliced bread in a pan and drizzle it with olive oil, add a little salt, then roast for about 20 minutes, until it is a bit crunchy. When bread is ready, spread cheese on it, add tomatoes and basil, and drizzle with balsamic reduction... Bon Appetit!
